This page contains a recipe for a raspberry melomel mead, a beverage made with fermented honey.

3 years agoThe last two times I made traditional batches I followed the guidelines for Medium Show Mead found in Schramm's book. Both times my OG was way below what I expected. Both times I was annoyed and attributed it to miscalculations on my part but now I want to get to the bottom of this. I made a table with the amounts of honey he suggests to get to a specific OG and FG. I calculated the ABV% for those OGs & FGs in order to get more precise calculations. Then I input the OGs, FGs, and ABV%s in the amazing MeadMakr BatchBuildr in order to see if the amount of honey needed matched. And well, it very damn well didn't.
Maybe I'm calculating something wrong, or perhaps it is well known that Schramm's guidelines were off and I didn't knew. In any case, here is my humble table. I know it's expected for the sugars content of honey to vary and thus change the OG to a lesser or greater extent accordingly. But the discrepancies were too large as to attribute them to sugars content % alone.

Schramm | MeadMakr | |||
---|---|---|---|---|
lbs | OG | FG | ABV% | lbs |
10 | 1.080 | 0.988 | 12.08 | 12.9 |
12.5 | 1.094 | 1.010 | 11.03 | 13.2 |
14 | 1.112 | 1.010 | 13.39 | 15.8 |
15 | 1.120 | 1.025 | 12.47 | 16.9 |
18 | 1.135 | 1.025 | 14.44 | 18.8 |
Do you agree that Schramm's amounts are not quite precise? The MeadMakr BatchBuildr approximates better?
